K-Mart Rocked My World Today

I haven't been to K-mart in years. I would have probably made it another several years if I hadn't learned thanks to Hot Coupon World (HCW) that the store was having this SUPER double coupons sale (i.e. they are doubling coupons up to 2 bucks). I don't know what bugs me about the store so much, but I thought I'd give it a go. They have made a lot of changes since I last went. The store looked nicer then I remembered.

Anyway, this sale was soooo good that my heart was racing in the store. Here are SOME of the deals and the break down (BEFORE the 5 bucks off coupon!).

Revlon Tweezers $1.99 - 1.00x2 MFG=FREE
Vaseline 13 oz. lotion $3.29-1.25x2 MFG= $0.79

I got some other things for free as well, but I don't really feel like mentioning them.

Before the coupons, it came to over 50 bucks. Then you subtract the 5 bucks printable coupon from K-mart if you purchase 50 bucks or more (thank you again HCW!). Then, you hand over the rest of your coupons. Basically, I got 50 bucks worth of stuff for about 9 bucks (for 13 items!!!). Not bad at all. Of course some things were wiped clean before I got there. I would have loved some free Dawn, but alas, it was not my day on that one. I'll know better next time that during their super double coupon days I better get my butt there fast.

Awesome deals once again!

I really enjoy shopping at K-mart. We have 2 in our area and I much prefer shopping there over Wal-mart. Granted it's no Target, but K-mart has Martha, and I'm a Martha fan.

Low Fat, Vegan, Spicy Senegalese Peanut Soup

I had the most amazing vegan soup at Revolutionary Soup the other week.  I haven't stopped thinking about how delicious it was... and that was two weeks ago.  I wondered if I could come up with something similar on my own.  I scoured the web and found some delicious looking recipes but none of them were quite right.  I ended up having to play around quite a bit.

While experimenting, I tried versions with lite coconut milk.  I figured if it worked, I'd then work on finding a lower fat alternative but it really didn't add much at all to the dish.  I ended up omitting it all together.  By contrast, the curry powder was absolutely critical.  It added incredible depth to the soup.  I used Tandoori seasoning (my favorite curry powder blend by Penzey's).

I was able to reduce the fat in this dish quite a bit by using PB2 in lieu of full fat peanut butter.  Powdered peanut butter has all of the flavor of peanut butter but 85% less fat.  You can find it at the link I provided or…

Scrapbooking THAILAND Freebie!

After years of neglect on this blog, I'm reemerging so I can share one of my passions: scrapbooking.  I've been doing scrapbooking for over 15 years.  I started out scrapbooking on paper but I have transitioned over to completely digital scrapbooking in the last 7 or so years.

Most of the time I just use whatever freebies I can find but I wasn't able to find a lot of scrapbooking elements and papers to properly document my Thailand travels so I decided to create my own.  Thailand is a very vibrant country and I went with very saturated colors to reflect that.
